Chef Corso and I Went Backpacking


Chef Corso and I went backpacking recently at Hawn State Park in St. Genevieve Missouri for a quick overnighter.  Chef Corso is a classically trained chef who has turned his career to cooking most of his food in the great outdoors.

We spent just 18 hours in the woods but got to enjoy two, incredibly delicious meals cooked from scratch and a whole lot of great conversation.

Our first meal (dinner), was a fire roasted jambalaya with andouille sausage and fresh peppers.  Chef Corso has over two hundred trail tested recipes that require less than 30 minutes to cook, take 10 or less ingredients and weigh pretty close to their dehydrated replacements.

On the morning of day two, we sipped coffee and cooked a Blueberry Banana Granola by a beautiful little creek.

If you don't have a lot of time, but can figure out a simple way to share a meal in the outdoors, do it, it's worth it every time.
